fin wail

I baked banana bread yesterday.

When it was time to add the eggs, I realized I didn't have any. It was too late to turn back. Babies were sleeping so we couldn't make a quick run, and I didn't feel like bothering any neighbors.

What to do...what to do?

I love a good quandary. Especially a cooking quandary. The challenge small. The stakes low.

Sometimes I win. Sometimes I fail. This time, it wasn't quite a win, but it wasn't a fail, either.

The banana bread came out moist and cakey.

With a slight tang.

Get this, back to them dern word verification - I just wrote a little comment and guess what the word verification wasn't showing it showed a box with an x in it like the picture wasn't showing and of course, me and my airheaded ways didn't copy my comment I just refreshed and byebye comment. :)

I would have zoomed on over with some eggs. but I'm glad to hear there was contact even if you didn't hit it out of the park.

There's a website called The Cook's Thesaurus (www.foodsubs.com). I make a list of subs for things like eggs and brown sugar and put them on sticky notes inside my baking cupboard. There are lots of egg substitutes! Check it out!
